Ingredients:
•1 cup Organic Pitted Medjool Dates, packed (13-14 total)
•1 cup hot water, just boiled
•1 tbsp Organic Dark Cocoa Powder
•1 tsp Organic Pure Vanilla Extract
•1½ cups Organic Oat Flour
•1½ cups Organic Rolled Oats
•½ cup Organic Brown Coconut Sugar
•½ tsp course salt
•1 tsp Baking Soda
•½ cup Organic Coconut Oil, melted & cooled
•½ cup walnuts, pecans, or hazelnuts chopped
•½ cup Organic Dark Chocolate Chips
•pinch of flaky sea salt
Instructions:
Preheat oven to 350°F, line an 8x8-inch baking pan with parchment, and coat with nonstick cooking spray. Blend dates, water, cocoa powder and vanilla for a few seconds until mostly smooth, then set aside.
In a large bowl, add oat, flour, oats, sugar, cinnamon, salt, and baking soda, then mix well.
Add coconut oil and mix until crumbly (not too dry or soggy ). Reserve 1/2 cup oat mixture, then add the rest to the pan. Spread evenly and press firmly. Pour date mixture into the prepared pan and spread evenly. Sprinkle chocolate chips and nuts on top and press them in slightly.
Bake for 30 minutes or until firm and slightly golden. Top with a sprinkle of flaky salt while warm. Let cool in the pan for 10 minutes, then lift out and cool on a wire rack. Once cool, cut into 16 bars.
🧁BAKERS TIP : wet and crumple your parchment paper to make it fit into your pan easily. While any remaining water out before adding your crust. Then trim the edges to fit the pan properly .
