These crunchy crackers contain no grains or dairy. What they do contain is a
whole lot of healthy fats, omega-3 fatty acids, protein, fiber, and minerals, not to
mention delicious nutty flavor. Be sure to find pepitas, the soft interior pumpkin
seeds inside the woody shells. They are an excellent snack on their own or are
perfect with cheese or your favorite dips.
INGREDIENTS:
3⁄4 cup Chia Seeds
1⁄2 cup Pepitas (pumpkin seeds)
1⁄2 cup Sunflower Seeds
1⁄4 cup Sesame Seeds
1 teaspoon Coarse Salt
1 cup Water
DIRECTIONS
In a medium bowl, stir together the chia seeds, pumpkin seeds, sunflower seeds, sesame seeds, salt and water. Let the mixture sit for about 30 minutes, during which time the chia seeds will absorb the water and form a thick gel that will hold the dough together.
Meanwhile, preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
Spread the dough on the prepared baking sheet about 1⁄4 inch thick.
Bake for 30 minutes. Remove from the oven and use a pizza wheel or pastry cutter to slice the crackers into 2-inch squares.
Flip the crackers over carefully onto a new piece of parchment paper, and bake for another 20-30 minutes.
Cool the crackers completely before serving. Store in an airtight container at room temperature for up to 5 days.
